A Season of Warmth and Resilience
Winter in Palestine arrives with rain tapping on stone rooftops and cold winds sweeping through olive groves stripped bare. The trees rest, but the people do not. In the stillness of winter, kitchens become sanctuaries—warm with steam, heavy with spice, and alive with memory. This is the season of sustenance and resilience, when preserved summer flavors and stored mouneh (pantry) are lovingly brought back to life.
Meals are hearty and grounding: lentil soup with a squeeze of lemon, freekeh simmered with chicken, and maqloubeh layered with cauliflower or eggplant. The scent of cinnamon, cumin, and allspice drifts through the house. Stuffed winter vegetables like cabbage rolls or heirloom balladi cauliflower are seasonal highlights—highly prized for their deep and delicious flavor.
Citrus trees glow bright against gray skies—lemons, oranges, kalamantina (clemntine)and bitter narang are picked and used for everything from fresh juice to syrups and preserves. In the evenings, fire-roasted potatoes or gently charred chestnuts are passed around, their warmth lingering on cold fingers. Herbal teas brewed with sage, wild thyme, or anise offer comfort and healing.
And when snow dusts the hilltops of Jerusalem or the highlands of Nablus, children return home rosy-cheeked for warm baked goods like sfeeha, sweet semolina puddings spiced with mastic and rose water, or a hot cup of sahlab thickened with milk and perfumed with orange blossom.
Winter is quiet, but it is not empty. It is a time of reflection and endurance—a season that draws people close around the warmth of kitchens and the richness of shared stories. It reminds us that even in the dormant months, life is quietly preparing—slowly, deeply—for what will bloom again.
