Mango Lime & Tahini Smoothie
"I'm hungry! What's for lunch?! Mom, we ate so long ago!!" (Usually by long ago, they mean an hour ago. Children can have a strange concept of time). Today, it is all about hungry children and snack talk. With three kids at home on their zoom sessions complaining about the overused wifi and constantly under a snack attack, I make sure to load my freezer with frozen fruits (Even ginger, which is awesome frozen!). Mango, lime and Tahini smoothie. Nourishing smoothies are the perfect option. During times like these, it is important to nourish and reboot our bodies with nutrient dense foods that will both strengthen our immune system and make us feel full longer. In this smoothie, I added tahini for a nice boost of protein and nuttiness' that is complimented with the fresh flavors of mango, lime, and ginger.This batch will make 2-3 ijeh depending how big and thin you like them. Its best enjoyed hot or at room temperature stuffed in a warm pita pocket.
Serves: 3-4
Ingredients
3 cups frozen or fresh mangos. If you are using fresh mangos then add ice, zest, and juice of one or two limes. Adjust to your taste
1/2 - 1 inch fresh ginger peeled and grated
2- 3 tbls of tahini (adjust to your taste)
Add One cup of coconut water or water. Add more liquid until you get the consistency you like.
Add honey to taste (optional)
Steps
Whirl all ingredients in a blender until creamy and smooth enjoy.
